Chateaubriand is the larger center cut of the tenderloin and also a method of roasting in French cuisine. It's an incredibly prime peice of meat averaging around 2-3#.

 

Trimming, cutting, and tieing are included in pricing.

 

We recommend an average of 1/2# per person when you're figuring out sizing.
